As for sitting in things; Duxford, Brooklands, Shoreham. It's more a case of getting lucky, but airshows are always best for sitting in stuff ;)

Yeah, but only half points for cockpits that don't have the rest of the aircraft attached. :))

XM655 has four of them, all serviceable.
